Apples are a delicious and healty compliment to this pork dish that is perfect for the holidays.
Ingredients:
1 pork tenderloin (about 1 pound)
4 medium crisp apples, cored and cut into thin wedges
1 large red onion, cut into thin wedges
2 tsp dried thyme (or 2 Tbsp fresh)
1/3 cup reduced sodium chicken broth
3 Tbsp apple cider vinegar
1 tsp black pepper
Directions:
Preheat oven to 400 degrees.
Heat oil in a large skillet over medium-high heat. Add pork; cook 4 minutes on each side or until browned. Transfer pork to baking dish and add apples, onion, and thyme around the pork.
In a small bowl, mix together the stock, vinegar, 1 Tbsp. oil and black pepper. Pour over pork mixture.
Bake for 25 minutes or until pork is cooked through (internal temperature 160 and slightly pink).
Cut pork into 1/2-inch slices. Serve warm topped with baked apples and onions.
